The best thing about this speedy tomato soup is exactly that, It’s full of speed soup. It’s also quite filling for the lack of carbs, perfect for those who may have gone off plan a little or want to try and boost their already good week 🙂
Ingredients
- 2 x 400g Chopped Tomatoes
- 1 x Tin of Baked Beans
- 4 x Mini Pickled Onions
- 1 x Tin of Chopped Carrots (Undrained)
Method
Step 1
Add the 2 tins of chopped tomatoes to the pan along with the baked beans, pickled onions and carrots
Step 2
Heat through for around 20 minutes before either using a hand blender or transferring to a blender and blend it until smooth
Step 3
Served best when using 3 slices of crustless bread to dip! (Healthy Extra B - 60g be sure to check as weight can vary per brand)

There shouldn’t be any problems with freezing the soup as long as it is heated thoroughly 🙂

Made this soup for friends and they loved it didn’t believe me when I told them the ingredients can’t quite get my head around what goes into the soup everyone thought I had roasted tomatoes peppers garlic will definitely make again store cupboard stables you always have in

We’ve never tried it without but you could give it a go but once all blended you can’t taste them

Adding up the calories on the tins, and allowing 12 calories for the onions, I get a pot total of 506 calories. Depending on servings, 1/4 of the total is around 126 calories, or 1/5 is 101 calories.

It depends exactly based on brand but around 400g for the beans some maybe 410-415g either way the whole tin goes in and around 250-300g for the carrots 🙂

I’ve just tried it. The onions give it a little kick. It was very nice. I will be tempted to experiment with other herbs and spices to change it up from time to time.
