Unicorn Bark – Syn Free – Slimming World

  • 200g Fat Free Natural Yoghurt
  • 50g Blueberries
  • 50g Raspberries
  • Green Food Colouring


Step 1

To start with take a baking tray and cover it with Clingfilm. This will make sure your bark doesn't stick to the tray, and makes clean up a lot easier!

Step 2

Pour 140g of your yoghurt on to the tray, spreading it evenly to create a flat layer of yoghurt, and put to one side.

Step 3

Put both the raspberries and blueberries into separate bowls. Then microwave each of them for 90 seconds. This will leave you with warm berry compote that acts as a food dye. Remove all chunks to give a smooth texture to work into the yoghurt.

Step 4

With the remaining yoghurt split it equally into three shot glasses. Mix the berries into two of them, and then for the third one add in a tiny bit of green food colouring, just to add a little more variety to the bark. For a bolder colour you can use a little blue food colouring too.

Step 5

Now for the best part of the recipe. Spoon the coloured yoghurts in different places on the tray so you leave lots of lumps of colour.

Step 6

Then use a cocktail stick and swirl all around creating a yummy unicorn rainbow.

Step 7

Once you have done this, put the tray into your freezer overnight, leaving it to harden and create a yoghurt fruit flavoured bark

Step 8

Once this has cooled, take it from the freezer and break It into little pieces, or big chunks if you're feeling peckish, ready to be devoured by you and your friends. Or keep it all just for yourself.
