Budget Friendly Carrot & Lentil Soup2019-01-27

- 1 x Large Onion
- 170g Dried Red Lentils
- Vegetable Stock
Start by peeling and chopping the carrots and onions, adding them to a large saucepan already sprayed with Frylight and cook for around 3-5 minutes
Next, put in the rinsed lentils then make up 1100ml of vegetable stock as per pack instructions and add this to the pan with the rest of the ingredients. Simmer for around 35 minutes.
Season to taste with salt and pepper, feel free to add more water if required and simmer a further 10 minutes.
Once everything is cooked, blend the soup either in a blender or a hand blender and serve.
